Don’t know about you, but I enjoy being creative when making something. Too often, it does not help when an ingredient or two may be missing in the kitchen. Truffles are a perfect excuse to try something new with limited ingredients.

Vanilla Matcha Truffles

  • Servings: makes 7
  • Difficulty: super easy

Sweet and smooth flavor with slightly rich tones from matcha powder.

Ingredients

  • 1/3 c. almonds
  • 1 T. maple syrup
  • 1 t. gluten-free vanilla extract
  • 1/2 t. matcha powder
  • 1/2 t. cacao powder
  • 2 dashes salt

Directions

  1. In high speed blender, add almonds, matcha powder, cacao powder, and salt. Blend until almonds turn into a fine flour.
  2. Add maple syrup and vanilla extract. Blend to combine. Should form slightly sticky dough-like consistency. Don’t over-blend.
  3. Roll in palms of hand a tablespoon-sized portion of dough. Repeat until six to seven truffles are made.

Cacao Cayenne Truffles

  • Servings: makes 7
  • Difficulty: super easy

Rich chocolate flavor with a kick from cayenne powder.

Ingredients

  • 1/3 c. almonds
  • 1 T. maple syrup
  • 1 T. cacao powder
  • 1 T. cacao nibs
  • 2 dashes cayenne powder
  • 2 dashes salt

Directions

  1. In high speed blender, add almonds, cacao powder, cayenne powder, and salt. Blend until almonds turn into a fine flour.
  2. Add maple syrup. Blend to combine. Should form dough-like consistency. If too dry, add more syrup or a teaspoon at a time of coconut oil.
  3. Add cacao nibs on low speed to incorporate but not grind up.
  4. Roll in palms of hand. May need to mash every now and then to keep mixture together. Repeat until six to seven truffles are made.
