Chocolate Cashew Crunch Pie

gluten-free. processed sugar free. raw aspects. vegan.

Deceptively healthy, few ingredients create each layer in a decadent sweet. The filling reminds me of hot cocoa with marshmallows. Not overly time consuming to make either. Freezing takes a bit, but can always choose to make first two layers night before.


Gluten-free and Vegan Chocolate Cashew Crunch Pie

Chocolate Cashew Crunch Cake/Pie

  • Servings: 2-4

Cashew Crust:

  • 1/2 c. cashews
  • 1 T. maple syrup
  • 1 T. cacao nibs

Chocolate Filling:

  • 4 T. culinary coconut milk in non-lite version
  • 4 dates – soaked and pitted
  • 1 T. cacao powder
  • 1 t. gluten-free vanilla extract

Chocolate Top:

  • 2 T. unrefined coconut oil
  • 1 T. maple syrup
  • 1 T. cacao powder


Cashew Crust:

  1. Grind cashews in high speed blender into a fine flour.
  2. Add maple syrup. Blend well to combine. Should form dough-like consistency. Don’t overblend.
  3. Add cacao nibs and blend on low to incorporate, but not grind nibs.
  4. Using a 4.5″ lined springform pan, press cashew dough into a crust without sides. Store in refrigerator.

Chocolate Filling:

  1. Blend soaked and pitted dates in high speed blender as well as possible, scraping dates off sides between blending.
  2. Add culinary coconut milk, cacao powder, and vanilla extract to blended dates. Mix well on a medium speed to combine, scraping sides to incorporate dates well between blending.
  3. Spoon mixture over cashew crust. Smooth top with spoon/spatula.
  4. Freeze for about two hours.

Chocolate Top:

  1. Melt coconut oil on low heat over stove eye if not already melted. Remove from eye once melted.
  2. Add cacao powder and maple syrup. Stir well to combine.
  3. Pour over chocolate filling. Freeze for five to ten minutes until chocolate has hardened. Recommended: cut into slices between chocolate freezing to prevent messiness later.
  4. Remove and enjoy! Please note, since the chocolate on top is more hard than the filling, it is best to eat like an ice cream sandwich as eating with spoon can cause filling to flatten.
