Almonds-and-Cashews

I need nut butter for two upcoming recipes. One requiring almond butter. The other cashew butter. In the past, I posted an almond butter recipe here. Which is well and good, but to make the butter creamier, adding a teaspoon or so of melted coconut oil helps. Here is a simple recipe similar to the last showing how to make almond and cashew butter from scratch with only three ingredients.

Notes:

  • I use a coffee grinder for a simple and quick method of grinding nuts into a butter. Feel free to use something else incorporating the below directions.
  • Don’t add water to this recipe. The results will be quick enough. I suppose you can add sweetener if desired, but do so towards the end along with coconut oil.
  • This nut butter is thick and creamy. I personally do not like gooey liquid-like nut butters. If desiring such, adding a little more oil until desired results are achieved should do the job.
  • Once made, store in sealed container in refrigerator.

  • Servings: makes 1/4 c. butter
  • Difficulty: super easy

Ingredients

  1. 1/2 c. cashews
  2. 1 t. melted unrefined coconut oil
  3. 2-3 dashes sea salt

Directions

  • In coffee grinder, add cashews and salt, blending on auto drip or fine setting until well ground and starting to blend into a butter like consistency of its own.
  • Add melted coconut oil and blend into a creamy texture. Should not take long. Specifically, probably less than a minute.
